Hi. Namaskar. How are you? Hope all are doing good. Here all of us are fine. Today I am here with a Christmas special bread recipe. Its a Milk bread It reminds me of buying hot bread from the bakery and coming home and cutting and having it. Now we always buy packet breads here. So I am going to show you how to make easy Milk bread at home I am showing you in two ways. How to make in an oven and a kadayi. I shall show the long loaf bread in the oven. Its not right if I say its just like the ones we get to buy. The second way is making it in a kadayi. You can make it anyways you like. I am using the same measurements for the dough in both the ways of making. I am not using little from the 1st dough to make for the second one. I have posted the correct measurement in the description box below. Just follow that. I have mentioned 3tbsp sugar because its a sweet bread. You can reduce if you want. All of you do try it out for this Christmas and do let me know your feedback. So without any delay lets see how to make oue easy and tasty milk bread. Now lets begin to make bread. I have kept a bowl here for that. Add 125ml luke warm milk. This is around 11tbsp milk. The milk shouldnt be very hot. It should be just luke warm. Just like we did for pizza Its the same procedure except that we are using milk here. Add 1tbsp sugar first and then 1tsp yeast to it. Its tsp and not tbsp. I am using instant yeast here. That will be a fine yeast. You can use the normal one too. If using the normal one, then add 1.5tsp of yeast. Mix it well after that and leave it to rise for 10mts. After 10mts you can see the yeast has rised. Now add 2tbsp milk powder to this. Thats when you get the perfect taste. Then add 1/2tsp salt. Now add 2tbsp more of sugar. So its total 3tbsp of sugar for this doug. Mix this well. Next add maida. You actually get to buy bread flour. But I use normal maida here. This is 225g or 1.5 cups or 15tbsp of flour. It might vary slightly according to the other ingredients. So we get to know how much we need as we add. Add little by little and mix well. Only if you mix well, the bread will come out. Either use a hand mixer or a food processor if you have one. If you are adding the whole together you will have to use your hands. So mix little by little. My hands are not strong to mix the dough. Thats why I am doing it this way. The 1st day I had used my hands. Then for 2 days I couldnt move my arms. Now the dough should be sticky like this. You might think its watery. Thats how it should be. Now we should close this for 15mts and then later add 1tbsp butter. It shouldnt be melted butter. It should be room temperature soft butter. Then knead it well for 15-20mts Its the mixing of the dough now that makes the bread soft. Lets close this for 10mts. Now add 1tbsp unsalted butter. If using salted butter, then reduce the amount of salt in the dough. If you want it salty, then its ok. Now its time for Jan to do the mixing Lets mix this well first and then taken it out of the bowl and mix it with little flour on the table top. There are recipes that dont need kneading much. If you want the outside hard and inside soft, then dont knead Now the butter is mixed well. Lets take this out and begin to knead well. Add little flour and then make a dough. This kneading is what brings in the softness. Either make the dough yourself or seek someones help. Breadmaking is a bit time consuming. You cannot make it when you think suddenly. But making one at home without any preservatives is what gives you a satisfaction. Many have been asking me for this recipe since long. When it sticks to the bottom, add flour and mix. I cant tell you how much we are using. We have to add little by little and then knead. Mix well slowly. Now our dough has reached the final stage. I had added around 3tbsp flour to knead You might think why not add that in the beginning and mix. Its totally different. If you add more flour and less milk in the beginning, you wont get soft bread for sure. So always take the way I have shown you. Then keep adding little by little flour and knead. I know many of you would be thinking its such a mess and long work. Thats how bread making is. Knead it for 15mts till the dough doesnt stick to your hands any more. Now Jan has made the dough to a super stage. It should be like this at the end. He did work on it for 15mts. I have given him the 2nd dough to do. I had told you that I am showing 2 ways Now take a bowl and add little oil to it. Spread it with a brush. Its for the dough not to become dry later Place the dough in it and then cover it and keep it in a warm place. Keep it for an hour to rise. It will double in size. Later we shall do the rest of the work. Now he is kneading the 2nd dough. I have become an expert in this now. See how the dough has rised after 1.5 hours. It should go deep in when you press it down. This is the correct stage we need. Now just punch it down and remove the air bubbles in it. Lets sprinkle some flour on the base and then put the dough on it. Dont add too much of flour. The dough will loose its softness. Just flatten to remove the air bubbles. Mix it once again like this. Now roll it slightly. I am going to make it in the shape of a bread itself. Going to show you a rectangle loaf now. I am making another dough too. Shall show the normal way there After spreading the dough like this roll it to one side. Now push the sides inside and make it like a bread. I am using this non stick rectangular tray here. You can use any tray you have. I have spread some butter on the tray. The next bread I will be showing is a round one that all can do. This is the correct shape of a bread. We have kept the dough in this. Now let it stay for an hour. Cover it with a wet cloth and keep it in a warm place. This is the loaf bread shape. Next I shall show you the normal bread that can be made by all. This is the 2nd dough. Lest press it the same way I did for the 1st dough to release the air bubbles. I am not going to roll this like the 1st one. We are going to bake this in a kadayi for those who dont have an oven. You can bake the other one also in a kadayi but I am not sure if that loaf tin will fit in all the kadayis. Just knead the dough slightly and then lets make small balls out of these. Its like doing Pav bun. You dont have to separate it like this. Its just to make it look good. I have placed them like this. You can make it in any size or shape. Can make just 2-3 out of the dough too. Its all upto you. Place them on any baking tray you have, let it be aluminium, nonstick or steel. You can place them on any backing pans that you used to bake cakes. Now cover it with a wet cloth and leave it aside for an hour like we did for the 1st dough. Now I am going to preheat my oven. Many had asked which oven do I use. So shall introduce my oven to you. Moreover baking is different in each oven. I only know about mine. Mine is Panasonic. Press the button convection. You can select the temperature you want. I am using 180degC here. If you want to change the temperature, just press the sides of the convection button. You can increase and decrease as you want. Now once you reach 180 degree, press start. It begins to preheat It stops when its hot enough. You can use a timer if you want. Then bake what ever you are planning to. Today we are doing bread. I shall show you the baking part then. Now after an hour, the dough has rised well. Lets bake this at 180 deg C for nearly 30mts. It should be golden brown in colour. The baking time may vary in each oven. I am baking for 30mts. You will understand when it turns golden brown in colour. You can taken it then. Check the bread after 20mts. I have already preheated my oven. I have kept the kadayi to preheat too. Now I am reducing the temperature to 170 deg C. Keep the time for 30mts and then press start. You can see the bread being baked through the glass door. You can check after 20mts and remove it when it turns golden in colour. Now lets place the breads to be baked in the kadayi. I have already heated the kadayi for 10mts. Now lets place this in the hot kadayi. I havee placed a ring in the kadayi. Shouldnt be kept direct in the kadayi Its like we did for the cake. Now close and leave to bake. You can open and check after 20mts. It might be ok then. Let it not get overbaked. So check after 20mts. Lets bake this on medium flame. Our bread looks like Pav bread. Jan asked me why I made it this way. I did it for a beauty. You can make it as a single bun too. Then you get a single big one. It took me 40mts to bake the bread in a kadayi. The oven bread was ready in 30mts. Ive kept it outside. This shows that the bread is perfectly cooked. Lets switch off the gas and take this out of the kadayi. Lets prick the oven baked bread and see. It has come out perfectly. So bake between 25-30mts and see. Oven baking wont take 40mts. The kadayi bake took 40mts. In 20mts it was just slightly golden in colour. So I left it to bake for another 10 more mts. The baking time will vary in each oven. So be careful when baking. Once it cools down, we shall slice the bread. I have made a small bread to show you. If you want to make the long ones like you get in shops, use more dough and a bigger pan. If you want double the size bread then take double the measurements of what we have taken now. Our bread has cooled down. Now lets slice the bread. This measurement is the best to make at home. See how soft it is. If you want you can cut and keep it in a tight container or plastic wrap it. I think tight containers are the best but usually it gets over fast. I suggest you cut at the time you want. Our super soft homemade bread is ready. I shall show you the other bread or bun. I have made it like a bun. See how soft it is. Like I said, be careful of the timings while baking. First bake for 20mts and then keep a watch on it. Once it reaches golden brown, then stop baking. If not bake on lower heat for a while longer So now you can make suer tasty bread or bun at home. Its soft like a cotton. Jan is asking me to make Mutton stew now to have with this. o I am going to make mutton stew now. Usually nobody eats the front part of bread here in my house Only I eat it. You dont have to waste it. Its just like the milk bread you buy from stores. Its super yummy. Very soft too. All of you do try it out and let me know your feedback. Its a Christmas special bake. You can make it as bread or bun or any shape you like. Bake as you like. See you with my next recipe.. Thank you. You can see some people doing it with both the hands and then hitting it like this and all. Its a good exercise too. Daily a small portion can be done this. Even today there are people who knead using their hands. Everybody in the world wont be having a stand mixer. Hand knead
